Lemon Garlic Dressing

Ingredients

One clove of garlic
2 tablespoons of extra-virgin olive oil
1 tablespoon fresh lemon juice
½ teaspoon finely shredded lemon zest (organic if possible)
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper
¼ teaspoon dry mustard

Preparation

Whisk all the ingredients together in a small bowl or put them in a jar and shake to blend. Use immediately or store, covered and chilled in a refrigerator for up to 1 week.

This makes enough for one large salad.
